I'm always really intrigued at what busy fit people cook.  So I thought I could share with you some of my favourite quick recipes that I love to make for my family during the week to keep me in shape but also taste great. Everyone knows that to be in shape there are some sacrifices we need to make. For example this week I'm shooting for a health mag so have amped up my work outs and cut some of the tasty things I love to eat usually..

Tacos are something you can still enjoy but there is a sacrifice. No taco shells. For some of you that will be ridiculous. But they are still incredibly tasty!

What I do…

First I make my Mexican salad.

I chop up into small pieces, tomato, capsicum, red onion, avocado, cucumber and coriander. I dress it with some salt and pepper and a little balsamic give it a mix and put it to the side.

Next, I heat some oil, brown some onion then brown some ground beef then add the flavour. If you are in a rush you can use a taco mix seasoning. Health experts will go nuts and say its full of crap if you are concerned you can google a recipe and make it yourself. I'm usually stuck for time so I grab a pre mix. I mix it in add a little water and let it simmer.

Once it's cooked through place it on your salad top it with some salsa and Tabasco sauce! And perfecto! You have created a little Mexican meal.

If you want to add some crunch brown up some mountain bread in the oven for 2 minutes crack in to pieces and use as a corn chip equivalent.
