Anna’s Easy Skinny Fish Cakes

Who doesn’t love a quick, healthy and delicious meal?

And the amazingly talented Anna Simon has the perfect midweek dinner recipe that’s too good not to share!

For your ingredients all you will need is:

  • 1kg white fish fillets uncooked (ling is yummy with this recipe)

  • 1 egg white

  • 1 tbs cornflour

  • 2 tbs fish sauce

  • 4 tsp red Thai curry paste

  • 1 cup fresh coriander

  • 1 tsp red chilli chopped (seeds/ chilli membrane remove to reduce heat)

  • 1 cup green beans thinly sliced

  • 4 spring onions finely chopped

Once you’ve gathered your ingredients all you need to do is pulse the fish in a food processor.

Add the spring onions, egg white, cornflour, fish sauce, curry paste, chilli, salt, pepper and coriander and process until combined.

Don’t over pulse though as over worked fish will get tough.

Then just add your beans.

Heat the oil in a frying pan and form your fish cakes into patties using wet hands otherwise your fish mixture will stick.


And from there just serve with a dipping sauce of choice, I recommend sweet chilli or soy sauce.
